2021 Sidra

Our latest cider endeavor emanates from the illustrious Baird Orchard in Dayton from Asturian cider apples that include Coloradona, Piel de Sapa, Repanaldo do Liebana and Solarina.

This this fabulous cider is redolent with brilliant apple blossom and rose petal aromas.  It’s dry with a round fruity body as a result of being finished in neutral Pinot noir barrels.  We have finished it to resemble a true Asturian cidra.  When poured from a distance into the glass it yields a light pétillant carbonation which slowly goes flat.

The Drosophila on the label, a nod to our constant companions during fermentation, was drawn by John’s mom Eugenia in 1936 when she was a scientific illustrator at Cal Tech.
